Summer Fun Recipes

Limoncello Mint Sparklers
1 can frozen lemondade concentrate
2 cups limoncello
1 btl club soda
large bunch mint.
In a pitcher, muddle with mint with the lemonade concentrate. Add limoncello and ice. Top with club soda. Pure refreshment!!!
Corn, Avocado and Tomato Salad
4 cups corn kernels
1 pint cherry or grape tomatoes, halved
2 avocados, cubed
1 bunch cilantro, chopped
2 spring onions, sliced
Juice of 1 lime
Juice of 1 lemon
1/4 cup olive oil
salt and pepper
Toss all ingredients gently together and serve
Grown up Caramelized Onion Dip
2 large vidalia onions
3 spring onions
1 large bunch flat leaf parsley
2 package Neufchatel cream cheese
salt and pepper
In a large saute pan, heat a little olive oil and add the onions, sprinkle 1 tbsp sugar over them and cook over low heat, stirring occasionally until caramelized, about 1 1/2 hours.
In a mixer, cream together spring onions, chopped parsley and cream cheese. Gently stir in caramelized onions. Season with salt and pepper.
Serve with crostini or kettle chips
